Today’s recipe is another recipe that’s a blast from the past. I was going through my burgeoning collection of recipes and cookbooks and rediscovered this one. I knew it would be one Tall & Handsome would enjoy. Of course, it’s a recipe I dabbled with some to give it a little more flavor…I just can’t help myself. It uses one of our favorite foods, lean pork, the other white meat. It is super easy to make and relatively fast to whip up, so it’s a good quick meal for two or three maybe four with a side dish. You can easily double the recipe for more.
T & H gave it his thumbs up and an extra “it’s delicious”, so another “keeper” for the Burch household.
Peachy Pork Picante
1 pound boneless pork loin, cubed
Taco seasoning
8 ounces of salsa
6 tablespoons peach preserves
Hot rice
1 tablespoon olive oil
1. Cut the pork loin into cubes and coat with taco seasoning. Set aside.
2. Heat olive oil in skillet. When hot, brown pork until no longer pink.
3. Add salsa and peach preserves. Stir to mix well.
4. Lower heat and simmer 15 minutes.
Serve over hot rice.
